Turkey pot pie.
You will need:
3 tablespoons butter or margarine,
3 tablespoons all-purpose flour,
1/2 teaspoon salt,
1 teaspoon snipped fresh or 1/4 teaspoon dried thyme,
1/8 teaspoon pepper,
3/4 cup turkey broth,
3/4 cup whipping cream,
2 cups cooked turkey, cut into 1- inch pieces,
1 package ( 10 ounces ) frozen peas and carrots,
1 small chopped onion,
Directions:
Heat butter in a saucepan over low heat until melted. Stir in flour, salt, thyme and pepper. Cook, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in broth and wipping cream. Heat to boiling, stirring constantly. Boil and stir 1 min. Stir in turkey, peas and carrots and onion.
Heat oven to 425°.
Perfect Pie Crust:
3 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1 1/2 sticks cold butter
3/4 cup vegetable shortening
1 egg
5 tablespoons cold water
1 tablespoon distilled white vinegar
Combine the flour and salt in a large bowl. Add in the butter and shortening. Using a pastry cutter, gradually work the butter and shortening into the flour until the mixture resembles tiny pebbles. This step should take 3 or 4 minutes.
Lightly beat the egg with a fork, and then add it to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it's just combined, and then remove half the dough from the bowl. Yield: dough for 2 crusts.
Pour turkey mixture into the crust- lined dish.
With the left over dough, roll into rectangle. Cut rectangle into 12 strips, each 1/2 inch wide.
Place 7 strips across filling; arrange remaining strips crisscross to make lattice top. Trim; turn edge of bottom crust over strips. Seal. Bake 35 to 40 minor untill light brown.
